The basic mechanism, as I understand it, is there is a hormone “leptin” that tells your brain you’ve had enough to eat.

It is counteracted by insulin, and insulin is produced as a result of eating carbohydrates.

So, if you eat a lot of carbohydrates, you’ll stay hungry, and keep eating until you’re stuffed, but you’ll still be hungry.

That’s consistent with my own experience.

No carbs, no insulin, much less hunger.

Yep that’s it in a nutshell. Well there is more to the story, but carbs are a huge part - especially from sugar and high fructose corn syrup.

I just read that most of our sugar comes from GMO beets now. Guess I’ll be growing more beets and making my own sugar - I have instructions somewhere on how to do it. Or maybe we’ll tap a maple tree.
