They should have and probably did listen to her lungs first as well as getting her oxygen level.

X-rays do not cure pneumonia. Most likely the influenza infection triggered her immune system into overdrive, her lungs filled with fluid (which IS pneumonia), and she died. This was the cause of death from the mutated virus of the 1918 Influenza Pandemic that killed an estimated 25 million people worldwide.
