That’s why anything like that, including salad bars (virtually non-existent today) have “sneeze shields”.
That and "pot luck" meals.
The buffets for the large numbers of people doing whatever you can imagine (inadvertently or otherwise) while serving themselves, and pot lucks because you have no idea who prepared the food, where the ingredients came from, and the conditions under which it was prepared.
Pot lucks aren't something I participate in.
My rule is that I don’t eat at places with sneeze guards.
