You can do a nice mushroom and sausage stuffing without any bread (or butter, which I must admit goes in it nicely).
Also you can saute green veggies in olive oil with some fresh garlic, ginger, salt and pepper. Kale, broccoli rabe, asparagus, or spinach are all good here.
Good luck finding asparagus that is imported from Mexico.
We do a lot of brussel sprouts with bacon, always collard greens, and I love my creamed spinach.
Not big stuffing people or potato peope, so it’s actually pretty easy to go low (starchy) carb on Turkey day.
