Did anyone try this? It sounds icky....one pound of solids and about 40 ounces of liquids inside tortillas?
My wife makes something like that. It’s yummy!

Hmmm. I’m looking for good recipes for our camping group potlucks, something easy to fix in an RV. All of the ones at the website so far use soup in the ingredients, not sure if I’d like those.

We’ve been making a green chile casserole in much the same fashion for 30 years — chicken is the meat and green chiles and olives in the mix with cheese and soups, no enchilada sauce, but sometimes salsa. Fast, good and gets all gone in a hurry. Tortilla chips are mixed in just before it goes into the oven until the cheese melts and everything “gels”.
This isn’t Mexican food. This is pure Texas.
Looks to me like some kind of mutant crossbreeding of the cream of canned soup casserole and with the stacked enchilada.
I’m not saying it might not be tasty. It might.
But I’m sticking with my green chili cheese chicken or red chili beef stacked enchiladas. Hold the the soup.
Sounds like an interesting idea. Someone give me some ideas about substitutions.
OK, instead of the enchilada sauce, I think I can get away with using either taco or chili seasoning in the meat and adding a can of tomatoes and substituting mixed cheese for the Velveta, but where am I gonna get mushroom soup and cream of chicken in Japan?
Also, I think a layer of refried or pinto beans is needed in here somewhere.

You lost me at the 16 oz of Velveta cheese. That stuff has one use only, fish bait in a pinch....

Ah, a newbie! Why so many recipe threads??? I can see if it was ONE thread that various people contributed to - maybe for a special occasion (Christmas, Easter), but a recipe thread every day???
We call this ‘Souper Enchiladas’ at my house. I wrap leftover chili and some shredded cheese in tortillas, burrito style. Then I pour the cream soup, tomato soup and enchilada sauce mixture all over the top. Add more cheese on top and bake. Great way to use up the extra chili.
