I never quite understood how seafood could be considered vegetables. :)

Properly pan frying scallops is an art form. Trying to put up a ‘recipe’ for people to follow for such a thing is probably going to result in a folks trying it, failing, and then blaming you for it.

Sooner or later the Church will have to change lenten fast ruling. Meat has become cheaper than fish. Fish has become a luxury item.

You are right-—Monk Epifanios taught me the best way—— which is to heat the olive oil until it is just smoking and then adding the seafood in this case scallops.

Then immediately turn heat down by half to medium.

The lemon (real - not the reconstituted stuff) goes on right before it is done cooking...does not take long.

I would add that dusting the scallops with a hint of flour helps protect them...and thickens the lemon sauce a bit.

We’re having our once a year during Lent Long John Silver’s meal. I can only handle the grease once a year. I can’t wait! :0) Other than that, we never eat meat on Friday. I like to serve meatless soups and pastas. Keeps my grocery bill down a bit, too, by not serving meat with every meal. It’s truly not that big of a deal.

Cod seems to be especially pricey these days. Dunno if its overfishing, or just popularity. I do know a number of local churches and other groups that hold fish fries are switching to haddock now because of the price of Atlantic cod.

The Father doesn't need our fasting, macquire, we do. The Church has never taught that fasting is for God's sake.

I was taught to keep spooning the hot fat over the top of the scallops. The flour would probably be a good idea, but just making sure they’re perfectly dry would go a long way in the same direction. The recipe doesn’t include any of that stuff, which is a recipe for disaster IMHO.

How true. I know a lot of people who 'give up chocolate.' How insulting to the Lord.

Thanks for a wonderful flashback! When I lived in South Portland, Maine big cuts of cod in the supermarket one or two hours from the boat was priced only slightly more than potatoes. It was heaven for a guy that was working out regularly.

Other than the sea scallops, the liver/turkey/beef chili is off the menu for Fridays. We have tuna casserole, cheese pizza, french toast/pancakes or cheese pizza. Works for us and I enjoy it.
