Yikes! That is one giant muffin.

If you’re looking for a low-carb breakfast sandwich, why not drop the bread altogether and grab a tortilla for a breakfast burrito?

Great idea. I’ve done the minute muffin thing with blueberries, cinnamon and a little chocolate powder. good stuff. Of course, flax muffins should come with a warning: eat too many and they will clean you out. Not that this is a bad thing, but newbies should be forewarned.

I’m going to try something similar this weekend with almond flour and maybe flax mix.
