Bacon, sausage, ham, some other kind of sausage, some other kind of ham,pork chops, spare ribs, baby back ribs, fatback, whole-hog barbecue, butt, a third kind of sausage, chitlins (chitterlings, for the over-educated), pea-meal bacon, pancetta, pickled pig’s feet, etc., etc.
Is there any meat as versatil as pork? Is there any food as tasty?
No, there is not. And at the top of the list is bacon.
Mrs. L made a pot of collard greens last night. The flavor enhancer of choice was a lovely smoked ham hock, slow simmered with the greens. Absolutely delicious.
