Pioneer Woman makes these easy green enchiladas----a nice filling side for a BBQ.----METHOD Saute lge diced onion, 2 tb butter golden brown. In 2nd pan heat very warm 15 oz can Hatch green enchilada sauce, 2 cans chp green chilies.
FINAL Oven-melt grated cheddar/jack atop 12 corn tortillas. SERVE--stack three cheesy tortillas. Spoon green sauce over; cut into wedges. Add sides of salsa, sour cream, guacamole, pico de gallo, chp cilantro.
Is there a particular store to get green enchilada sauce at? I could never find it in Minnesota. Just now thought about it when I saw your post. I haven't looked in South Dakota yet.
