Which spices do you use for your Pastrami? Most recipes call for picking spice
which basically makes it Corned Beef. I've been looking for something a bit less
powerful for my second attempt.

Our brine recipe for pastrami is from the book, “Charcuterie.”

It consists of kosher salt, sugar, pink salt, pickling spice, dark brown sugar, honey, garlic, water.

Yum!
