Jon Anderson is a good recommendation - that "Three Ships" album continues to grow on me.

In that same vein, there is an album by Blackmore's Night called Winter Carols that is excellent. Especially the track "Christmas Eve." Yes, this is the same Richie Blackmore of Deep Purple and Rainbow fame.
