Bacon Hash Browns

ING 3 medium potatoes, small onion, 3 rashers streaky bacon, fine-chp, tb self-raising flour, 1/2 tb milk, egg, grind of pepper, veg oil, sea salt

METHOD coarsely grate peeled potatoes and onions. Add fine-chop bacon, flour, milk, egg, black pepper. Mix well to combine. Batch-fry heaped tbl in 3 inches heated oil. Deep fry 2 min---edges start to turn golden; flip, cook 2-3 min. Drain; salt liberally.

Eat immediately, or keep warm in a low oven until ready to serve.

Bacon Pancake Dippers / Fluffy Buttermilk Pancakes cooked w/ bacon

METHOD Make Fluffy Buttermilk Pancake Batter as per box directions. Pour into squeeze bottle; cut tip TO ease pouring.

Spray griddle and heat to medium heat, about 300 deg.

Squeeze pancake batter in long oval shape onto griddle, bit bigger bacon slices—--will expand.
Center w/ cooked bacon slice, gently press in. Squirt batter on top zig-zag.

Cook til batter bubbles up; then flip; cook golden brown. Serve hot w/ maple syrup and butter.

Finally was able to get in sync with a “ National (insert food type) Day. Bacon day!

Our family had a Christmas New Year’s tradition baking Baltic style piragi. Minced bacon, English style not streaky, with onions and pepper. By the dozens for family, holiday guests, after church coffees. The dough was a hardy sort, well suited for traveling vittles.

As I worked my way in the world I was often homesick for these little delicacies.

And then I discovered the Pillsbury tube biscuits, which solved my dilemma with making the dough.

Using the Pillsbury buttermilk biscuit Grands I can knock out 16 of these very fast.

First mince the onions, saute until soft, add to the minced bacon, add pepper, mix and set aside.

Pop the chilled biscuit can open, separate and then divide each into two discs, lay out lightly flour waxed paper and lay out the flattened biscuits, add a teaspoon or so of bacon mix and fold into semi circles, pinching the edges. Add a light egg wash after placing on baking sheet, 12-15 minutes at 350 until golden brown. Total time about 30 mins.

Lighter than the heavy originals and easy to produce in quantity for the surprise visitors during the holidays. There are never any left overs. And as a guy I score extra points for being able to bring these to the table. Great for in between snacks on sports weekends as well

Wow...that is a fantastic recipe.

Always nice to grab something off the supermarket shelf and turn it into a unexpected treat.

And bacon, too.....what could go wrong?
