I’ve gotten used to the fake Vanilla in my oatmeal or pancakes. The real Vanilla can be expensive. This is just for me, not a line of customers.

artificial vanilla (”Vanillin”) can be made from wood pulp by products. I used to work for a company that made it. Chemically, same stuff as the real.

Problem is, there is only one pulp mill in north america that has the type of waste stream that lends itself to vanillin.

I was in the grocery store just before Christmas to buy some vanilla flavoring. It was $14 for a couple of ounces of real vanilla. I was shocked, let me tell you.

I still have a couple ounces of real vanilla extract left. Hopefully it will last me until the crops rebound.

You can save a few bucks with DIY vanilla extract.

Buy some of the beans, put in a jar, along with your favorite alcohol beverage (rum, vodka, bourbon, etc), and keep for a month or two. The longer the stronger.

If you’re starving for vanilla ice cream in Washington, DC, you can find some at Jeni’s ice cream parlor, at 14th and U St. NW. When I last ate there on the day after Halloween last year, I had a cone filled with ice cream flavored with vanilla from Congo-Kinshasa, which would not have been affected by the hurricane.

One of the vanilla ice creams supposedly made with “real” vanilla, is Breyers. Personally, I think several other brands which DON’T use the real deal, taste a whole lot better.
