To my knowledge, several medicines are developed from horse serums. People who eat horse meat may develop allergies from exposure to those medicines.

One of those is Anti-venom,
When i was 14, i got hit by a big rattler while dove hunting with some friends. When i got to the hospital they immediately started me on anti-venom. 2 weeks after starting the anti venom , i had a severe reaction. Took 2 more weeks to clear that up. According to the doctors the reaction was brought on by an allergic reaction to horses. He said i could have the same reaction to horse meat.
