101--a silly millimeter longer...

SAT AM--Grill heat calibration trials are completed...steady temp of 200-225 can be maintained. Suitable smoke generation can be accomplished on the grill, had to relocate some of the ceramic bricks over the flame so as not to set the aluminum pan on fire...switching to an old pie tin to reduce flaming!

Brisket is out, rubbed and getting to room temp.
Weather: 59 and sunny!

B-Time: -1hour!

The rub...some lite brown sugar, onion, garlic powders, chili, cumin, bay, thyme etc.

After marinade and rub...

Ready to go onto grill...Final Q sauces and some white bread for sopping

Grill set up, revising the smoke tray...that aluminum just won't cut it

We came at the end of Michaels which was fine by me. I think he lives around here now.

Cross Canadian Ragweed opened. I would not have minded seeing them.

It was a huge crowd....sold out....I think that means 25K crowd for that venue.

Nice amphitheatre but some of the staff and cops were real asswipes. Not enough bathrooms and all that crap.

Skynyrd sounds really really incredible live...they have no problem imitating their sound properly and they seem to enjoy it. They probably cleared over 250,000 for that one so I guess I'd be grinning too.

Decent crowd...broad spectrum in age, income and aptitude but all patriotic and open to "Southern Stuff" (atleast here)

Average age is around 25 probably. I woulda never guessed I would enjoy them even more now than I did 32 years ago.

It's not exactly a Dave Matthews or Green Day crowd..lol

I smell like mesquite now...internal temp of the hunk'o meat=140 after 3 hours...perfect...3 more hours to go...

Ok - I'm jealous. I'm going to crank up Vicious Cycle and some classic Skynyrd this weekend around the smoker. I had some ABB on, but you got me in Skynyrd mode!

You had to rub that ticket in! LOL! Did Billy play Freebird solo on the piano for a bit? I love when he does that. Too bad Leon's not with them any more.

Awesome picks, thanks for sharing GRRRRR. I'm helping my friend with his new smoker this weekend. We're going to do a pork shoulder with a rub similar to yours, some smoked corn on the cob, some mashed taters, and delicious sweet tea. Does it get any better?

The only thing better would be if I had a ticket to the Skynyrd show with Wardaddy!

I've got three pork butts in the bullet smoker and a pot of my own sauce on the stove. Should be ready around 8:00 tonight after 12 hours over hickory chunks and apple wood. Now, of course, my 'Q can't hold a candle to that done down south (bowing and doffing hat to my Southron brothers) but its about as good as can be done here in CT. I call it "Yankee Swine".

We're due for some thunderstorms in a couple of hours so I've put a tarp up over the smoker - that should keep things dry and the temperature up. I'll do a little quality assurance testing tonight, and then bring the rest to a picnic on Monday after its had time to age for a day.

It's DONE!

Six hours total for 7 lbs...taste is super, but just a red-hair on the chewy side...a couple more hours in the foil would have done it...First Lesson!! But man it Tastes WONDERFUL!!

Hey Ol' Sox, your doings are as good as any down South. 12 hours, slow cooked, in the smoker, hickory chips, homemade sauce.

A rainstorm might have scared away lesser cooks, you just bust out the tarp and keep it cookin!

Enjoy your picnic - I hope it clears up for Monday.
