Quick little tip for a different flavour for summer lettuce-based salads.

Add mandarin orange slice AND sprinkle (before tossing) fairly generously to taste with ground cinnamon and either ground or fresh-peeled/chopped ginger.

Do try it -- very tasty.

Refreshing summer meal that our friends love:

5 ripe tomatoes, remove skin, dice and sprinkle with sugar*
1 medium red onion, chopped
1 garlic clove, put through press
3/4 cup shredded fresh basil
1 cup chopped fresh parsley (flat parsley, not Italian)
1/3 cup coarsely crumbled Feta cheese
3 Tablespoons olive oil
2 teaspoons balsamic vinegar
salt and pepper
1 lb. Fettuccine

Mix all in ingredients except the Fettuccine together. Let sit on the counter all day or for a few hours.

Serve over Fettuccine.

Serves 4 without leftovers.

* To remove skin from fresh tomatoes: Boil tomatoes in water for about 30 seconds and the skin slips right off

Oh, forgot to mention that I made some authentic Irish Soda Bread to go with the boiled dinner I made yesterday:

Flour
Buttermilk
Baking soda
Salt

Mix, bake, rest, eat. Yummy!

Sunday Was Burgers on the grill and tossed salad.

Monday was white rice, mixed vegies, Boneless Center Cut Pork Chops seasoned with onion, garlic, oregano, pepper, salt and olive oil seared and cooked on the grill.

Tuesday rotisserie chicken On the grill with green beans and roasted potatoes. (Also on the grill)

See a pattern here? I refuse to cook inside with the air on.

I'm still thinking on the rest of the week.

We've got a bumper crop of tomatoes coming on, so we're having tomatoes with every meal.

Last night we had chicken tacos with lots of fresh diced tomatoes, lettuce, guacamole and cheese. I served refried beans on the side, easy ones, from the can.

The heat finally broke last night after 101 degrees yesterday, so I'll be slow simmering some pork loin country style ribs for a couple of hours until tender. Then I marinate them for hours in a mixture of teriyaki sauce and a can of chunk pineapple with juice. Tonight, I'll fire up the grill and finish the ribs on it until they're lightly browned. I drain the pineapple and place it in a foil packet and cook that on the grill as well.

On the side we'll have baked potatoes and stuffed tomatoes. For the tomatoes, quarter them *almost* all the way through, leaving the base intact so it stays together. Mix up some shredded sharp cheddar with a little mayo, cayenne pepper and garlic powder. Stuff each tomato with the mixture and bake at 350 around 20 mins. until cheese is bubbly and starting to brown.

Tomorrow, I'm thinking about making homemade pizza with olive oil, fresh sliced tomatoes, basil and mozzarella. Probably serve a simple salad on the side. This one is going to be a hard sell with my 9 year old son. Maybe I'll throw some pepperoni on part of it. LOL

If there's not too much bbq sauce on your chicken then you could cut it up into bite sized pieces and mix it in with a creamy macaroni salad. That would be a nice, cool lunch meal for those hot days.

Add your lemon chicken to your rice/veggie mix (depending on what it's seasoned with), or put some in a salad. Can't think of any more ideas, sorry.

I need to get organized that way ... and avoid the ubiquitous "What do you want for dinner?" "I dunno. What you *you* want?" "I dunno. Whatever you want." conversation.

Sounds like our Thursday night conversations (when we go out to SCA practice). "Where do you want to eat?" "Wherever you want." "No. Where do you want to eat?" "I always choose where we eat." "No. I do. Where do you want to eat?" "What's open this late?" We drive around, waste a finite resource, then end up at Wendy's. Last time we did this, my husband just drove straight to Wendy's.

Mmmmm, Wendy's. When I lived near one, I'd always get a cup of chili and a ceasar side salad. Now THAT was an easy and inexpensive meal. I miss it. :(

oh thank you all for the wonderful ideas!

i'm thinking of a blend of them all because
they all sound perfect!

a macaroni salad with the grilled chicken
(pasta is spirals and scooby doo-don't lol
too hard) :D, asst veggies and some mayo
based dressing with a tossed chef salad
and some sourdough flutes toasted with
garlic, butter, etc.

off to boil the noodles, i like my pasta
salads very cold...esp in this heat

You could use the sloppy joe meat like taco meat and make taco salads. Even add a little taco seasoning to make it authentic.


I'm having broth, jello and frozen koolaid(that clear liquid thing)

What kind of grill do you use to BBQ?

I always used my little Weber. Unfortunately, some jackass stole it off the back porch 4th of July weekend >:(

I have to buy a new one. Charcoal is the only way to go.

Unbaked Caramel Cookies

2c. Sugar
3/4 c. butter
2/3 c. evaporated milk (not sweetened)
1 4oz. pkg. instant butterscotch pudding mix
3 1/2 c. quick cook oats

Bring sugar, evaporated milk and butter to full boil in lg. saucepan over medium heat stirring constantly. Add pudding mix to the hot liquid and mix well. Remove from heat and stir in oats. Cool 15 minutes. Drop on waxed paper on cookie sheet by spoonfuls. Refrigerate or place in freezer.

(warning: Very delicious and fattening. Serve cool, they will get soft if allowed to warm too much. They freeze well)

update on tonight....eureka!
while digging i found a large
bowl of pasta salad w/ ranch
dressing! ive added the chicken
and veggies. i only need one box
more of pasta, sorry scooby! and
a tad more ranch dressing. :D
