I should have been more specific.
The ph of the wort during the cooking is said to leech off the al.
There is still some debate over how harmful it really is though. I prefer to err on the side of caution and use stainless.

Oh, I just figured out what you meant by “freezing it”. No, my secret is a special strain of yeast. Some yeasts have a higher tollerance for higher levels of alcohol. Jacking is technically illegal ya know. I would never do anything like that. :)
