You are right about baking powder, it depends on the recipe/what you are making. In a packaged recipe there is often baking powder or other agent to assist in rising. If you have a brownie mix, but you’d really rather have chocolate cake, add and extra egg or two.

Well, Belgian style waffles are sweet.
You would cut the cooking time or temperature a touch.
The sugar will increase the browning.

Seems like a recipe for making the waffles stick/burn.
You can add all the sweet you want AFTER they are cooked.

You realize that you are going to have to post how successful you were! What is the old adage? Too many cooks.... Add some sugar. I add sugar to my pancake mix (however, I make that from scratch). I prefer a sweeter pancake because I use syrup very sparingly. Waffles are the same as pancakes except for the device used to make them. Let us know if everything turned out okay!

Good for you making waffles! You don’t have to do anything different if you are not adding a lot of sugar. You tell by the consistency of the batter whether to add more water (to thin it out) or more waffle mix (to thinken the batter). It is not an exact science.

Thank you all. I hope I haven’t missed anyone with this ping update.
I made the waffles and they turned out great. I decided to add three eggs, but I selected the smallest egg in the container for the third egg.
I added 3/4 cup of sugar, because after adding 1/2 cup it just didn’t look like enough for that huge pile of waffle mix.
The package of mix was a little more than double the recipe, so I adjusted the water by eyeballing it.
I think my waffle-maker is getting too old, because the bottom sides of the waffle were perfect while the top sides were undercooked. That’s a brand new symptom, based on what it was like when my wife would make them.
But they tasted fantastic. Fir those who asked why I wanted to add sugar, the reason is convenience and laziness. I knew I was making a ton of waffles, far more than we could eat at one meal. So, I knew we’d be freezing the leftovers, and it’s so easy to slip them, frozen, into the toaster and then have pre-sweetened waffles for several days afterward.
My daughter and I will split the leftovers, and we’ll both freeze what’s left.
Way to go!
