Need Advice from Recipe Mavens

It's up to me to make the Christmas Day waffles this morning and I need help with the recipe, please.

I bought a waffle mix and I'm doubling the recipe on the box AND adding sugar. I need advice on how I should modify the recipe to account for the added sugar.

The recipe calls for 3.5 C of the mix, 1 extra large egg and 1.5 C water.

So, I can figure out merely doubling the recipe, but because I'm adding sugar, I'm not sure what adjustments I should make to the measures of the mix, the water, and the egg (I only have large eggs, not extra large) to allow for whatever the sugar will do to the finished product, other than make it sweet.

HELP!!!!!

BTW, I’m a guy, this is the first Christmas since my wife left me, and I’m making the waffles for my adult daughter and me.

Unless your altitude is 6000 feet or higher, then carry the 2.

Personally speaking, and not knowing how much sugar you are wishing to add, I would double your mix use 3 eggs to allow for the ‘extra large’ eggs and then your sugar.

It's a bowl of cereal ... think ... how much sugar would you put on your corn flakes?

How much milk in the bowl so that the corn flakes are 'milked' but not soggy?

You have dry ingredients and wet ones that ultimately must pour onto a griddle.

Invite me over for some.

How much sugar are you adding?

You know what batter consistency you want for waffles, right? Just mix the ingredients you have, see the batter consistency then add whatever sugar you are throwing into the mix and then add enough water to get the same batter consistency.

better yet, sprinkle the sugar on the cooked waffles instead of adding to the mix. ;-)

Egg size isn’t critical... if you are doubling the mix, use two eggs.

I put sugar on Capn Crunch :)

Standard eggs for recipies weigh 2 oz each. Use a total of 4 oz (weight, not volume) of eggs. Add your sugar and if the batter seems too thick, add more water, a tablespoon at at time until the thickness is what you want.

Why would a recipe call for 'extra' large egg if the egg size is not critical? Wellll 'critical' is your word.

All the egg is doing is making a binder...helps hold things together. 1/2 an egg isn’t that critical
