Personally speaking, and not knowing how much sugar you are wishing to add, I would double your mix use 3 eggs to allow for the ‘extra large’ eggs and then your sugar.

It's a bowl of cereal ... think ... how much sugar would you put on your corn flakes?

How much milk in the bowl so that the corn flakes are 'milked' but not soggy?

You have dry ingredients and wet ones that ultimately must pour onto a griddle.

Invite me over for some.

How much sugar are you adding?

You know what batter consistency you want for waffles, right? Just mix the ingredients you have, see the batter consistency then add whatever sugar you are throwing into the mix and then add enough water to get the same batter consistency.

better yet, sprinkle the sugar on the cooked waffles instead of adding to the mix. ;-)

Egg size isn’t critical... if you are doubling the mix, use two eggs.

Standard eggs for recipies weigh 2 oz each. Use a total of 4 oz (weight, not volume) of eggs. Add your sugar and if the batter seems too thick, add more water, a tablespoon at at time until the thickness is what you want.

Easy thing to do: just double. It doesn’t matter if you have large or extra large eggs. You aren’t really baking per se. (that is when measurements are really vital). If the mix looks too thick, add some more water (tablespoon at a time and mix). Don’t over-do the sugar. I would add 1/4 a cup. The sugar will brown the crust slightly. You may want to pep it up with a tsp of vanilla as well. It adds an extra yum. Hope this helps. You will be fine. Remember, the first few pancakes/waffles are always experiments. Always. The pan heats up well and you will be off and running. You are a good Daddy!

Why add sugar to the batter?

Serve the waffles blanketed w/ confectioner’s sugar. With traditional maple syrup poured over, that makes them sweet enough.

Or serve with apricot or strawberry jam thinned out with a “simple syrup” (sugar and water heated together til melted).

Double it as you wish, add a bit of (butter)milk if it’s too thick. Egg size doesn’t matter, a bit of added sugar doesn’t matter either. It is important to beat the eggs but NOT to beat the batter too awfully much, as it gets, well, ‘beaten.’ You’ll be fine, they’ll be perfect, your daughter will be touched. You’ll know if they are too thin — the batter will dribble off the sides and make too-thin waffles. You cannot really ruin waffles.

This is just way too complicated for the human mind to grasp. So just add 3 cups of water to the mix, take one large trout, a kitchen chair and a length of rope. Are you with me?

Now open the freezer and get the frozen waffles out. Easy.

You don't adjust anything in the mix.

You would cut the cooking time or temperature a touch.

The sugar will increase the browning.

Why do you want to ADD SUGAR?
I wouldnt do that.
Seems like a recipe for making the waffles stick/burn.

You can add all the sweet you want AFTER they are cooked.
