I like to slice up my zucchini, spray with pam, arrange the zucchini on it spray again and top with Parmesan cheese....then bake. Yummy and almost no calories.
Now that sounds yummy-I’ll have to try that soon, too-especially since I always plant zucchini and summer squash because they can grow in this thin soil, along with spinach. It is “squash season” all summer here-the spinach gives out in late June, to be replaced by bush peas/beans, okra and collards, but the squash doesn’t give up until frost, so I appreciate every new recipe...
