Im taking a vacation from beer until I drop 15 lbs for a race I am running this month. Somehow I gained a little weight last month and it is coming off no matter what. Actually, I know exactly how I gained it. I started having three beers EVERY night instead of just on friday night. I have a theory that we're going to see a non-trivial increase in alcohol consumption due to several factors:
- The economy in a slump.
- The tyrannical overreach of government.
- [Both contributing to] The growing sense of powerlesness.

Advice from John Palmer - Cidery flavors can have several causes but are often the result of adding too much cane or corn sugar to a recipe. One component of a cidery flavor is acetaldehyde which has a green-apple character. It is a common fermentation byproduct and different yeasts will produce different levels of it depending on the recipe and temperature. Cidery flavors are encouraged by warmer than normal temperatures and can be decreased by lagering.
If it is caused by aceto bacteria, then there is nothing to be done about it. Keep the fruit flies away from the fermentor next time.

May have been an infection from the bread yeasties. I make all my bread here, too. Bread, beer, cheese, sausages.... everything I can.
It all works out. I don't waste any of it. Even if it is cidery.

Aceto bacteria and lactobacillus don't last around here. We've got black mold, and they gobble them up. I'd be making sourdough bread if I could keep a decent starter alive.
It's a harsh place for some kinds of foods. You gotta work with what ya got.
And I'm getting used to it. ;)

Brewed a triple IPA a couple of months ago. Strong as hell but the carbonation didn’t work out as well as I wanted it.
Oh well, lesson learned to add more carbonating sugar on a high gravity brew.

Please add me to the beer / spirits brewing list. My BIL has been brewing beer for several years. I have to make a better brew than he does. My sis and I have the same wine recipes, so we are tied in that department, just have to sample each other’s wine to see which is smoother. Thanks in advance.
