OG Hydrometer Reading of my Liberty Cream Ale

Good evening/afternoon. I brewed up a Liberty Cream Ale this afternoon, a kit from Midwest Supply. I did a Late Extract addition at 30 min. for this brew. It was a busy afternoon. I made a yeast starter using Safale 05 dry yeast yesterday afternoon. And pitched it in an 80° F wort. The OG was at 1.052 out of the primary fermenter before the yeast starter was pitched. This beer has a beautiful color and should be a tasty brew in about 6 weeks. Ice it down, get it cold, just in time for the Dog Days of August. Now I will wait for the ferment to start. The Porter I bottled three weeks ago is taking its time carbonating. It is not right yet and is still a little sweeter than I want a beer to be. I bottled up my Honey Ale on Wed. It smelled, looked and tasted like it will be a great beer for a July 4th BBQ. I also racked my Copper Ale to a secondary on Wed.

I usually add a little extra DME to my Extract kits. Yum - makes breakfast interesting :)

Just bottled up my latest attempt at Bells Hopslam.

Messed up a little.

Did 3 fermentation's and ended up adding too much water. I added 3 lbs of honey last which caused some foaming so I drained 2 quarts which caused my dry hopping hops to stick to the sides of my bucket above waterline nullifying them.

Rats!

Other than that it tastes really good right out of the bucket before bottling and calculates to be about 15%!

Last batch I added 2.5 lbs or so of light malt extract which gave it a caramel flavor. Did not add that this time and added 5 lbs of honey instead of 2 lbs which gave it a much milder flavor.

Success!

Bottled it a week earlier than planned due to being thirsty.

This will be quite good but next attempt will be even better. Myself and my friends will be quite pleased and the next batch will be even better.

I really should think about dry hopping with hops in a bag.

Really getting close. It's a seasonal so it will be nice to be able to drink it year round at a fraction of the $64 a case price.

Before that I perfected a spiced wit that took about a year to get where I wanted it, only to go to a craft beer expo where Ommegang Witte blew me out of the water.

Modifying a kit Called Red Eye PA from Brew and Grow.

It has a nice grapefruity hop flavor, then added 2 lbs of corn sugar and 5 lbs of honey added in increments.

Hopslam tastes like Surly Furious and mead and is about 10% or so.

Very precious little info is available about it so I am on my own trying to copy it with limited resources.

I confess - These Brewing threads have tweaked my cuerosity about this hobby. And it has lead to more than a few web surfing occasions.

One casual observation so far . . .

The divide between the Glass Carboy vs. Better Bottle camps is roughly equal to the divide between FReepers and DUmmies . . .
