Ha! In fairness, I think I've read articles before on FR where the rules for kitchens is VERY tough when they want to enforce them - to the point of being ridiculous.

Someone didn’t get an adequate pay off. I worked in a newly opened restaurant in New Jersey. Nothing got done without a huge pay off. It was an eye opener for this girl from the Bible Belt.

I know what I speak of - empty paper towel holder, uncovered cup in kitchen, freshly opened can of hash not the right temp, being able to pay for a waiver from having to wear gloves....
Yet rarely do they shut down places that are a real threat to public health. It’s all a power play.
