Wash it thoroughly and get it on ice asap. Take off the head, gut it, fillet it and remove all membranes. Soak the fillet in milk (or buttermilk) for 24 hours. Cut the fillet into half-inch-thick, 6-inch by 8-inch pieces and tenderize each fillet by pounding. Wrap the strips around two slices of pepperjack cheese and a strip of Ortega chile. Secure the fillet with toothpicks on the ends and in the middle. Dilute each egg white with a tablespoon of water for each egg, and whip until foamy. Dip the fillets into the egg foam. Bread the fillet in a mixture with two parts white corn meal to one part corn starch. Fry in peanut oil, @ 320 to 350 degrees, for three minutes or so on each side. Top it with drawn butter, garlic and lime juice and salt to taste. Garnish with beak.

Never eaten any Norm as I prefer Rock Fish, Dungeness Crab and big Shrimp and of course Smoked Salmon . I still have at least one niece living in SC so I’ll give her a shout...
I just had some Dungeness crab for dinner tonight. Creamed on toast. Good stuff.
Never tried that because there is never any left when we have. Season hasn’t started here yet but the docks and parking lots are stacked high with pots rigged and ready to go. Sport season has been open for 3 weeks but the ocean can be pretty nasty this time of year for small boats.

My brother came over from Redding and went out of Cresent. Dropped some off in Willow Creek on his way home. Thank you Brother. Their not quite full yet but mighty tasty. Is commercial season supposed to open on the 15th ?
Local Blog is reporting no Crab for Christmas due to the skinny fill rate...
