I dunno, cello or bass-guitar for the backbeat, add violin with sax or french horn if no trombone then would make up the midtones, and a second guitar for backup on the riffs would be a good basic grouping. Add in some amps and some echo delays to make it sound like more than a single of each instrument was playing, and if you want to get even fancier add in a third guitar for some arpeggio and flamenco flourishes and I could pull it off I feel.

One guitar can only get you so far, a la one-half of 'Dueling Banjos' or the first part of 'Stairway to Heavon'. Or "The Town of El Paso" for the southerners out there.
