Yes, we do. If Italian authorities request extradition, the U.S. government would have to move to extradite her. She could challenge the extradition in court. But it’s my understanding she would have to demonstrate the extradition would violate her constitutional rights.

Shouldn’t that be pretty easy to accomplish? The Italians are going to keep trying until they can get a court to convict her. If the standard is by “constitutional rights,” presumably our constitution, I don’t see how they could extradite her. The Italians can go to hell with their legal system.
Couldn’t she challenge by the US double jeopardy laws?
Well any future extradition to Italy for a retrial would violate her fifth amendment right against double jeopardy. In the US, an acquittal can't be reversed, eg. O J Simpson. Why should a US court allow a extradition of someone who has already been acquitted of a crime to be retried?
