Plain white paper, block printing (pencil or pen, no crayons), standard envelope, and make sure you put a stamp on the letter.
Traditional post is considered old fashioned but is still charming and quite pleasant.
I like to stir things up a bit by sending letters anonymously with words/letters clipped from newspapers and pasted on the page.
