To: Bloody Sam Roberts

I have about 5 lbs of the Lindt and a mix of other brands stashed.
All dark. No milk chocolate.

The recommendations I see always say to NEVER freeze chocolate. It makes the oils and fats separate.
I dunno if it’s true, because mine is stored in the wrappers in a small metal crate, in a part of my house that stays pretty cool.

I vacuum seal dark chocolate only in Mylar bags with O2 absorbers. I opened one 2 weeks ago that had been sealed thus since 2010. It was wonderful.
