Just barely on-topic but maybe someone knows the answer. And it does involve brown fat.

Here is the question:

Why don't the chickens that I buy have dark-meat legs? The thighs are typically the normal dark but the legs are almost as white as the breasts.

Chickens didn't use to be like this. I'm nervous. Should I be?

Maybe they’re padding the floors of the chicken cages now and their balancing against each other takes less leg activity? Activity makes meat brown, as opposed to white.

I suppose that the chickens are raised differently and fed differently as well. The color of the meat indicates that the chicken did not get a lot of exercise walking around........

Mass produced chickens genetically selected to grow as rapidly as possible, so much so that when they are the size to be harvested their legs cannot support the weight of their bodies so they keep sitting down rather than standing.

because they eat other fattening things... my parents are in their 90s, and they are in good physical shape... they eat hot chili every day... but they also eat small portions during meal times... my dad eats several meals throughout the day, but always small... i love heat in my food... chili, hot mustard, wasabi, sriracha, (however you spell it)... the serrano pepper is my favorite... and i am not fat... :)

My suspicion as well. I guess I need to try some Free Range Chickens and see if that makes a difference.
