I don’t think the bacon would get cooked enough during the time that the rolls bake. It would be better if you crisped up the bacon a little before wrapping it in dough.

Yes.

The trouble would be not eating all the bacon prior to placing it in the roll.

After all, it is bacon.

My mom used to pour a little batter in the waffle iron, then three strips bacon, then more batter. We never died from eating them, and the bacon wasn't always cooked that great.

Bacon is cured. That's cooked enough for me. I can't abide crispy bacon. Warm is good enough for me. I like it microwaved and chewy.
