Chop the shortening into fine small bits, cubes perhaps 1/8th inch on a side, and use no more water than you need. When you roll out the pastry, you want those little chunks of shortening to flatten out; these will make boundaries between the pastry layers, keeping them from sticking together. Hence flakes.
A pie crust so construsted is extremely fragile. When it comes time to put it on the pie pan, roll it around a floured rolling pin then unroll it onto the pan. This enables you to transfer it without putting a finger through it. Same for the top crust.
I quite agree with all you said. My dad used butter and he lived to be 97. In fact most of my relatives of that generation lived longer and healthier lives than their children are. We have only 2 families with a Breast cancer gene. It came from the rare Male line. 2 Sisters married 2 brothers, the gene is hit and miss as all the females have been tested from daughters to grands and working into the great grands.
I have Gastroparesis, slow motility, it takes up to 4 hrs to digest the same meal a normal person would take a hour to do. There are lots of foods I can’t eat. I find I can digest Butter better than I can margarine. Olive oil, coconut oil and grape seed oil with a little butter for flavor, is what I use when I need to use an oil.
Having Hypothyroidism SOY is not on my food list in any form.
Sea food allergic so even fish oil pills are out.
