Certain fish are served like this ( head , tail , etc. which is not eaten of course ) a minute or so after the sashimi is cut and the fish is not quite dead yet . Can’t get any fresher than that . This exact thing in video happened to me soon after I arrived in Japan . I put a hand towel over the fish’s head because I didn’t want it looking at me lol !

I saw a video of a guy eating sushi once, and the fish they served him from was STILL IN A TANK SWIMMING!!!

They had cut one side of the fish off, and it was still alive and swimming around in the tank

The one time I ate fugu (blowfish ... specially licensed chef ... deadly toxin ... etc.) in Japan all the pieces of the fish that would be used in the meal were brought to the table to show it was completely fresh before going back to the kitchen for prepping as sashimi. And yes, the pieces were twitching. But not so active that they tried to escape.
