So then, if we want financial privacy, and keep away from government oversight and snooping, should we invest in bitcoin? If enough people want to go around these governmental financial plans, will bitcoin become a prominent alternate form of money?

Difficult to say, right? I mean Bitcoin is not accepted at grocery stores in my area. That could be a major hurdle.
