In the strictest sense, “vellum,” is cow or calf skin only, deriving from the same root as, “veal.”

The text was translated as: "Try the veal. It's the best in the city."

In a perhaps not so strange coincidence, the herbs, spices and seasonings most popular for flavor are largely anti-microbial. All traditional methods of preserving food and making it shelf stable certainly are, have to be otherwise the food would spoil. So, in a disease-plagued time, this would be a hot topic of conversation, even if they really didn’t understand just why these foods were more healthy.
