Pumpkin is a good LC substitute for sweet potatoes. Season the roasted pumpkin chunks the same way as sweet potatoes but use LC sweetener. Or mash them. I can’t tell the difference between pumpkin pie and sweet potato pie. I’m making LC pumpkin pie twists with an almond crust.

I had a coworker who fed her kids steamed cauliflower at least twice a week. However, she totally freaked when I suggested mashing it like mashed potatoes but she screeched I was trying to kill her kids. What, so eating the flowerettes are ok but mashing them is pure poison?

We had mashed cauliflower last night with butter and sour cream. Yuuuuuum! I finished off the leftovers for breakfast.

Who says LC doesn’t allow root vegetables?

Potatoes, sweet potatoes and parsnips are the only really high carb root vegetables. Turnips, celery root, carrots, radishes, beets, onions, jicama and rutabaga are fine if you don’t eat the whole pan.

thanks everyone. I myself will be eating anything and everything, except sweet potatoes and squash.
My wife has diabeties and dairy intolerance. She enjoys a traditional broccoli dish that has dairy and carbs. I was looking for a substitute so that there is something she can enjoy. My daughter also has dairy and gluten problems.

True for them all. Even the carby root veg are important, counted as your carbs.

Your pumpkin twists sound great.

Yeah, chunks of any squash, roasted, are so good. Easy way: put the whole pumpkin or hard squash into the heated oven, keep an eye on it, and once it softens enough to cut, pull it out, cool, and cut and peel and put back in oven in chunks, with butter or olive oil and salt. Can bake til the tops brown a bit, so delicious.

I would try AIP or Autoimmune protocol recipes since dairy is a common allergy.

Cube up some butternut squash.

Toss with olive oil and sprinkle with curry powder and cumin. Roast at 350 for about an hour.

Pull and add some walnuts pieces. Toss and stick back in the oven for about ten minutes.

Salt lightly.

You can leave out the walnuts if you want. Or add some chopped garlic along with the walnuts.

Low carb and non-dairy as requested.

Dairy causes severe intestinal issues and joint pain for me so I am non dairy. Daughter has MS and so she is dairy free. Hubby is not dairy free. I can’t process the milk casein but I can eat the fat so the only dairy I consume is clarified butter. I have had to go through a very strict elimination diet to find out what causes problems. I miss dairy but I sure don’t miss all the pain.

Carbs are just fine in moderation. Dairy solids are a common allergen. Fat is essential for life, carbs and dairy are not. I have several autoimmune issues and my daughter had MS. I didn’t decide to just stop eating things that I enjoyed. I went through a very strict elimination and reintroduction process - still working on it. I can’t just eat anything I want. Eating out is impossible because I don’t want to relapse. I am fairly certain that I am not the only one dealing with real health issues and I sick and tired of being ridiculed because I don’t eat gluten, diary, nightshade or processed sugar. Great for you that you can eat these or other foods but a little compassion would really be nice.

Sorry if you were born with out a heart, especially during Thanksgiving. Sorry that our real health issues are getting you down. You are advocating that we poison ourselves. The damage from eating an allergen can continue to damage our joints, brain, thyroid and immune system for up to six months after consuming an allergen. We are not doing this to HIP or to bring you down. We are doing is so that our daughter does not have another MS attack, so that I don’t have more arthritis pain, migraines, gallstone attacks, or digestive pain and so my husband does not have a spike in his glucose. We ate what we wanted for years and we are paying the price; not anymore.
