After the agricultural revolution, the agriculturalists did not get fat.
They had lean times.
They had to work hard.
They ate lots of carbs.
Only the rich could afford an abundance of food. "Rich" food has the name for a reason.
People are getting fat because they eat a lot and don't exercise as much.
It has nothing to do with pesticides(except the aid having an abundant food supply), processing, or artificial additives. Getting fat does not depend on them at all.
It is very simple.
And, despite it all, we are living longer and healthier lives than our ancestors, because of modern sanitation, pesticides, antibiotics, and medical technology.
You may have heard of Occam's razor at some point?
You probably agree the obesity epidemic is a disease of abundance.
I am glad we agree on several things.

Because the rest of us were adults in the 1970s, and spent a lot of our childhoods in the 1950s.
The 6.5 oz Coke was the only size from 1915 to 1955. And it’s what all of the Coke Machines dispensed for years afterwards since the bottles were designed to be re-used, not discarded, and there were millions of them. Coke also had cane sugar in it instead of nasty High Fructose Corn Syrup, another factor suspected to be contributing to America’s expanding waistline. HFCS replaced cane sugar in 1980.

The keto diet is unforgiving for those who cheat. Once you eat starches or sugars while you’re on it, ketosis halts and you are going to gain more weight instead.
Those who can’t stick its strict regimen would be better off on something like the DASH diet:

Now that I can choose for myself, I have never once ate jello as an adult. And I never will.
What you are not recognizing is how much the what you eat has changed.
The processed food of today is nothing like the food of the 1950s
The food of the 1950s is nothing like the food of the past 80 centuries.
The obesity pandemic worldwide began in the late 1960-1970s. Yes people eat way too much. And they eat too much of the poisoned processed foods. And the crap they eat is everywhere, and most everything they buy or constantly get by eating out. The system has hooked and got them in the name of convenience.
Try this. Grow all your own food except for such things as grains which are hard to do on a small scale. Grow it organically. What you cant grow, buy at local farmers markets. Raise organic chickens and eat wild venison. Dramatically increase your intake of fermented foods, can, preserve, and freeze your produce, fruits and vegetables for winter consumption. Live off your root cellar from stored squash, beans, potatoes, sweet potatoes. And always use honey harvested from your own hives. Grow and dry all your herbs. Eat all you want. Be at your lifetime weight watchers weight for going on 10 years after losing 60 lbs. have your annual physical with blood work that puts 20 year olds to shame. Go outside today and plant your garlic. Now you have just a glimpse how I get my food. Anything in a package, or drive through window, my friend, is poison.
Democrats are trying to pretty much ban or super-tax anything except tasteless vegan gruel.
Not necessarily true. Once your body becomes “fat adapted” an occasional cheat won’t make too much difference, the body will quickly get back into Ketosis. Although I would recommend doing Keto with Intermittent Fasting.
Anecdote is not evidence.
I will match yours with mine.
Exercise regularly. Cut down on calories by seldom eating food with over 30% calories from fat.
Never gain the 60 pounds.
Put 20 year olds to shame in 10 k races into your middle 50’s .
Have your doctor marvel at your fitness level in your middle 60’s.
Yes, the 60’s and 70’s are when we stopped having to work the body as much, simply to live. And food became absurdly cheap as a result of abundance.
The major difference is how abundant and cheap food, and especially “rich” food has become.
The rich often had problems with the diseases of abundance we have today, all throughout history. Look at how rich people are portrayed in history. They are often obese.
They did not have pesticides, processing, and additives.
They had access to all the food they wanted, and did not have to work hard, physically, to get it.
Exactly the situation of people today.
People are fat where food is cheap.
In terms of food, people in the USA are almost all rich.
Your system is just another way to get exercise and cut down on fat calories.
Great that it works for you.
Oh yeah, I think his channel is How to Beat Diabetes or something like that. Most of what he does is informatively boring.

Yeah he is long winded. He could cut 2/3rds of each video.
I usually watch the intro to see what he is comparing, and then fast forward until I see him posting results.

I’ve seen claims that if you let a potato cool before eating it, even if you reheat it, it has a lower GI.
He tested both and the difference was like 2 points. Not big enough to make any difference.
Ground hominy,afaik, cannot be prepared al dente, like pasta.
Not that there’s anything wrong with that.
