I don’t use a butter knife. I use an old fashioned can opener, the kind with the triangle edge. Use the other side under the lip until you hear the seal pop. Works great!

I just did that about an hour ago —a jar of pickles and one of olives— but I use the triangle part.
That’s what I do. My opener has a magnet on back, so I keep it attached to side of fridge...always handy!
I use the same end of the can opener. All you need is to release the vacuum seal. Like you said, easy.
