Dinner ideas for hot summer days

Italian Pinwheels

INGREDIENTS 3 large burrito sized tortillas 12 slices of salami 12 slices of pepperoni 6 slices of deli ham 6 slices of provolone cheese 3 romain lettuce leaves

Cream Mixture 8 oz cream cheese softened 1/2 cup pepperoncini peppers – sliced small 1 tbs Italian dressing 1 tbs Italian seasoning 1/2 tsp garlic powder

DIRECTIONS In a small bowl mix all of the “cream mixture” ingredients together until creamy. Spread the cream cheese all over each tortilla (about 3 tbs – 1/4 cup) then layer the rest of the ingredients on evenly. Tightly roll each one into a spiral then slice into 1 inch thick pinwheels and enjoy!

Fish fries up quickly. We are having trout fried in olive oil and butter. With Tajin spice blend on top, with lime juice squirted on. Garden salad with homegrown tomatoes, warm ciabatta bread, and fresh fruit. And a glass of chilled white wine.

8 oz of Penne pasta cooked.
1 jar of Bertoli alfredo sauce
Two medium tomatoes cut in chunks or equivalent halved plum or cherry tomatoes.
1 can of artichoke hearts

Once pasta is cooked, drain it and add the Alfredo sauce and artichoke hearts and heat that up together for a just few minutes until hot and stir occasionally. Then fold in the tomatoes and heat for another minute.

Probably about 30 minutes from start to serving.

Chilled, pealed and sliced cucumber and vidalia onions in apple cider vinegar. Before combining, soak the vidalia slices in water for half an hour.

Sliced tomatoes and corn on the cob are a summer staple a the Unique house.

We keep one of those miniature "Kentucky Legend" hams in the refrigerator. They come pre-sliced, which helps greatly. Our favorite Summer evening dinner is a chef salad with diced Kentucky Legend ham slices, with a few Ritz crackers for my Mom). Easy to make, minimal cleanup and very tasty.

That ham also makes a dandy ham sandwich as well, and is great in omelettes.

Wow. These are good idea! Thank you Freepers, I love you all :) I really appreciate it and now I’m starved and going to head to the store for some stuff to make either gazpacho or blt and grab also some corn on the cob for another days meal.

Macoozie, I’m in Phoenix. Yesterday was 120. Back yard is looking like Death Valley. I’m hope now that Leslie Van Houten is out she is not back there looking for that hole in the desert Charlie told them all they were going to move into.

Persian salad. Chopped tomatoes, mint, feta cheese, with white balsamic vinegar for dressing. Chill everything and add dressing right before serving.

I've also been making pizza at home. I bought an Ooni wood-fired oven and have been making dough from scratch. I made a double-fermented, high hydration (i.e., wet dough) a few days ago and had friends over a couple nights ago. My pizzas have been turning out great and getting rave reviews from family, friends and neighbors. The dough for this one fermented for 48 hours.

I've watched lots of pizza masters on Youtube and read many web sites. Vito Iacopelli on YT is hilarious. You wouldn't believe his passion for pizza and his quest for the perfect dough. "Soft and crunchy."

Ah, the leidure of hot day eatings! Some might recall the term ‘charcuterie’, others would say a mild to a wild foodboard spread.

Items include chilled olives - green or black, crackers of some kind - wheat, normal or even triskits, slices of salami, pepperoni, ham, or those Italian thin cold cuts i cannot pronounce right, a few different cheeses - those minibels work well, each one in wax cover - mozzarella string, sliced edam or gouda or simple cheddar or colby cubes, a pickle or two or three - either bread n butter slices, mini gherkin or mini kosher dill, and for those who can tolerate fresh fruit -light green or mosel, and other fruit to finger pick ( i am deathly intolerant so this is yours to call), and finally your choice of beverage.

Whats nice is if any leftovers, there’s something to pick at later.

Although it’s a dip for eating with corn chips, I can make a meal of Cowboy Caviar and it’s refrigerated so it’s delicious when the weather is hot.

Cowboy Caviar

1 bottle Italian Dressing, 16 ounces
1 pound tomatoes (I use Roma tomatoes when I don’t have garden fresh)
1 - 15 ounce can black-eyed peas, drained and rinsed
1 - 15 ounce can black beans, drained and rinsed
1 - 11 ounce can super sweet corn, drained and rinsed
1 - large red onion, diced small
1 - bunch green onions, sliced thin
1/2 cup diced green bell pepper
1/2 cup diced red bell pepper
1 cup chopped fresh cilantro

1) Mix all vegetables.
2) Stir in dressing.
3) Stir in cilantro.
4) Optional: Season if you prefer additional seasoning. We think the Italian dressing seasoning is enough.
5) Refrigerate until cold or overnight.

Serve with chips or crackers.

This is the basic recipe.

I’ve also added extra onion or cauliflower chopped small or used different types of corn or beans.

I have extra Italian dressing on hand when I make this because sometimes I add more of different items and it needs more dressing.

I’m sure that y’all can invent lots of variations to this basic recipe.

How could I forget our neighbor’s recipe for homemade dinner rolls for a hot day?

100+ Degree Mailbox Rolls

1) After the mail run, place frozen dinner rolls (not thawed) in a baking pan.
2) Place pan in mailbox on 100+ degree day.
3) Remove rolls from mailbox in two hours.
4) Check for dust before serving.
