That can be done with any gas. But nitrogen is dirt cheap. Air is about 78% nitrogen already; separating out the 21% oxygen is a fairly simple and inexpensive process.

Those puffed-up potato chip bags? Nitrogen. Excluding oxygen retards spoilage.
Excluding oxygen from tires is supposed to make them run cooler, but I can’t see why.
