Question about Adkins:
Several weeks ago, when Carlo began his first Adkins thread, I read a comment from someone about roasting green beans, basted in olive oil and some other spices.
I wasn't on the diet at that point, and wasn't paying close attention to the details. Following and reading the entire thread convinced me I could give this diet an honest try.
Now I would like the Roasted Green Bean info, and cannot find it for the life of me. Does anybody have knowledge of this? I've done search after search and cannot find it. Perhaps I was under the influence of too many baked potatoes and misunderstood at the time.

I always thought green and yellow beans are fine on Atkins, just avoid the white,kidney and Northern bean variety, with starch.Par boil the beans, then toss in olive oil, lay out on a baking sheet and roast to slightly brown, like you can do with asparagus.Or...you just cook them through in a saute pan with olive oil and a bit of butter.I like to toss my beans in a butter,lemon juice,chopped garlic and chopped rosemary mixture that I nuke in the microwave for 20 seconds, and prseto, have instant sauce.

IG - I found this site for our daughters on Atkins and it has some great recipes. Also, Lysie has some wonderful dessert recipes. I can post them if you want to give them a try. They do NOT taste like diet food :-)
