Hi Colleen. Glad you enjoyed Louisiana. When I present a state I try to capture some of the flavor, or the uniqueness, or 'atmosphere' of the area. With Louisiana, especially New Orleans, it was easy. They have a rich and unique ethnic heritage found nowhere else.
I want to go see for myself, although I am not fond of seafood, and it seems that's what they are famous for. I am sure the Creoles and Cajuns must do something interesting with beef. :-)
