Bread machine recipe ping! We gots to try some of this.

BTW, remind me to show y'all Carlo's Clinton Legacy cookbook. I acquired my copy last week, and it's hilarious.

Check out http://www.3fatchicks.com. They have lots of low carb recipies plus a lot of other interesting articles and stuff. There's also a really good fast food list with everything you ever wanted to know about the different menu items.

LowCarb Vegetable, Bacon Quiche Lunch Muffin Cups
  • 1 package (10 ounces) frozen chopped spinach
  • 2 large eggs, or 3/4 cup liquid egg substitute
  • 2 rashers of microwaved bacon, crumbled
  • 3/4 cup shredded cheese, cheddar, mozzarella, or reduced fat cheese
  • 1/4 cup diced green bell peppers
  • 1/4 cup diced onions
  • 3 drops hot pepper sauce (optional)
1) Microwave the spinach for 20 minutes on high. Drain the excess liquid.
2) Insert a 12 cup muffin pan with foil baking cups. Spray the cups with cooking spray.
3) Blend in the eggs or substitute, cheese, peppers, onions, and spinach in a bowl. Mix well.
4) Pour evenly among the muffin cups.
5) Sprinkle with crumbled bacon, and pat down..
Bake at 350°F for 20 minutes, until a knife inserted in the center comes out clean.

Quiche cups can be frozen and reheated in the microwave. Any combination of appropriate vegetables and cheeses may be used, also include fresh herbs, and spices to add a kick..
Serves 6
