in Memphis there are two:
Corky's (several locations - we like the original on Poplar)
The Rendesvouz (down near Beale Streer)
Both make great "Memphis BBQ," which is basically pork ribs and pulled pork shoulder.
I think Rendesvouz has the better Memphis 'speciality,' which is dry ribs, just a seasoning rub, no sauce on it (though you can get sauce if you want). They also make an interesting lamb BBQ. I am not, personally, fond of ribs, unless I'm in a mood.
My favorite, however, is the Corky's pulled pork plate. Their sauce is great, they accompany it with baked beans and a really good cole slaw, and their rolls are to die for. The kicker is to get an onion loaf, which is really thin onion rings smooshed down into a loaf pan. You have to cut chunks off with a knife. The don't seel that to go, for good reason, because it takes too long to fix for the drive up and it doesn't reheat well.
Both places will ship FedEx to anywhere. It's well worth it.
Memphis BBQ has won every national championship that compares regional BBQ for the last decade or so. It's the gold standard, without a doubt. The Memphis in May BBQ contest is the top of the BBQ circuit. It's a blast to attend, and even more fun to participate in (so long as you don't have to drive anywhere ;^>)

Is Corkys the place that provides airline meals for Northwest Flights that go through Memphis? If so, it was by far the best Airline food I've ever tasted and great barbecue on it's own.

I live in Missouri and have eaten at Arthur Bryant's, Gates, and a bunch of other really great barbeque places. But I've got to admit that I ate the best ribs I've ever eaten at Corky's. I was down there for a convention a couple of years ago and The Rendesvouz hosted our group on their main level. They set up buffet lines with all kinds of barbeque. That was pretty good but dinner at Corkys the following night beat it.
I definately agree with Rendezvous. I had a hankerin' for their ribs yesterday but DH said Memphis was just to far to go on a Friday night. Party pooper.
I second Corky's but I "first" the RENDEZ VOUS.
However...I'll stack my dry ribs against the RENDEZ VOUS any day. It has taken me years to duplicate their mix of ingredients but I think I've got it.

Is Interstate BBQ still open? They had wonderful BBQ but only until dark.
As a native Mid-Southerner, I agree with your choices in Memphis, but I "converted" to the Carolina school of BBQ during my military career. The Memphis brand is okay, but I still prefer the zing that comes from those vinegar-based sauces. BTW, The Commissary in Germantown isn't bad when it comes to BBQ, either...I'm surprised someone on this board hasn't started a "wet" vs "dry" ribs debate....
Speaking of West Tennessee BBQ, there is a place called Latham's around Jackson. Better than Corky's, IMHO.
