I've always wondered about that. That is, do they wash their hands before they stuff the olives, make the cheese and bottle the wine?

Frankly, I don't trust cooks. Most people in the food industustry, even in the country clubs, generally have socialist tendancies. The wealthier the customer, the more likely they hate you and literally wish you ill. An example is Jesse Jackson, who spat in peoples' food. I heard one creepo bragging about using a hamburger bun like toilet paper. I talked with pest control guys who visited a lot of a restaurants. The country clubs were the worst, he said. That's here in the US.

Now, considering that France is extremely socialist to begin with, and that many French hate Americans, I would trust none of them, no matter how sweet they try to be.

France asidie, I've been in the restuarant business for 11 years. When I ran the floor, it was a struggle to have people wash their hands after going to the bathroom. Most other managers failed to back me up. They didn't care, either. Any bacteria on their hands get smeared on the gloves when they put on the gloves. There's no sound proceedere to carefully put on the gloves, and gloves are sometimes worn so long that they gather up bacteria as well.

Conclusion: it's best to only eat what is cooked by those who love you.
