I haven't really done serious research into this. What are the differences between the Wrokstation product and the GSX product?

GSX is more of a server product. Workstation is more targeted at individual users who need, say a copy of a specific version of windows to test software or a website with. Obviously, you could use it to run applications as well.
GSX is closer to the ESX product (though it does need to have a host operating sywtem under it - unlike ESX, which runs on its own version of Linuxdirectly on the hardware.

To expand a bit, and hopefully make it a bit more clear, with GSX, you'd most likely set up a couple of virtual servers that would start when the system started, as opposed to being something that you would fire up on demand with Workstation. There is a web interface to the GSX product that allows you to control the virtual sessions remotely.
