The letters to those churches by the Apostles became the books of the New Testament (formed by consensus by 300 religious leaders during the council of Nicaea in 325).The Catholics generally recognize the existence of the "Vetus Itala" or Old Latin Bible, about 200 years earlier. There were several councils that reviewed the contents of the Bible but there were very few changes in the Books included until the Reformation.
