At a table, a dozen or so refugees - most of them from Africa - sit and nod. Some smile and chat among themselves. They appear to get the picture.
This workshop on how to eat American food responsibly is part of an Illinois state-funded programme to improve the nutrition of refugees who are being re-settled in the land of plenty.
"First we are most concerned about whether they will understand how to eat American food," says Shana Willis, with the non-profit refugee resettlement agency Heartland, one of the project co-ordinators.
"They did not only not understand how to eat American food, but they went immediately to the junk food and it was then that we realised, this is going to have a much more important impact than we anticipated."
Culture shock
One of the major challenges for organisers is to change the way the refugees think about food. Many of the new arrivals suffered from malnutrition and came from places where food was scarce.

Oh, for goodness sakes. There are quite a few halal markets in middling, southern Greensboro, NC, so I'm fairly certain this is a nonissue in Chicago.
This is an ESSENTIAL HUMAN SERVICE that only the government can provide. Illinois is known for its fastidious fiscal management and protecting scarce tax dollars.
Considering Blagojevich is the gov, I'm surprised there aren't yet taxpayer-funded classes on the correct way of applying hairspray.
My dad and his family immigrated through Ellis Island in 1927. I remember the many times my grandfather spoke with fond remembrances of the "Introduction to American Eating" class they took at Ellis Island.
I agree.What i find infuriating is that WE fund this crap.Am i(we)supposed to buy the premise that immigrants are not capable of purchasing and consuming healthy food?Whatever happened to good old common sense?
Really! And back then, if anyone had suggested such a thing as a course in American Eating, he would have been thought of as crazy as a loon. Unfortunately, those who vote for RINO's and 'Rats have allowed the growth of the Nanny State, and the Food Police are just one of its manifestations. People need to demand accountability as to how their tax dollars are being spent.
