I'm not sure I would eat a scallop raw, even to just taste-test it.

With the condition of local waters here, I'm not sure I'd try it either. But I will say that the best way to eat them raw is freshly caught when they are warmer than refrigerated and the salt water adds to the flavor....but that was many years ago.
