SUGAR FREE SPICY CRANBERRY SAUCE
1 package fresh cranberries (12 ounces)
1 cup water
1 cup Splenda
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/8 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/4 teaspoon orange extract (optional)
Put all the ingredients into a medium saucepan and simmer on medium heat for about 15-20 minutes, or until all the cranberries have popped, and the mixture has thickened.
Remove from heat, cool, and refrigerate. Serve cold.
Makes about 2 cups.
NOTE: This is great for diabetics, but you can make it with regular sugar and it will be just as tasty!
LAZY SWEET POTATO PIE
Buy graham cracker crust.
Bake a couple of sweet potatoes
Whip up some heavy cream with a little dark brown sugar and vanilla extract (and maybe a drop of almond extract)
Peel and mash sweet potatoes and throw in some nutmeg, ginger, allspice, mace and cinnamon, and a little maple syrup, if you have some.
Gently fold in some whipped cream with the mashed potatoes until even, but don't stir it too much.
Heat up an oven to 350.
Put the pie crust in the oven for about 5 minutes, take it out and fill it over the top with the potato/whipped cream mixture.
Bake for about 20 minutes - Brown but don't burn
Cool and serve with the rest of the whipped cream
